Saints + Council (saintsandcouncil.com) is the name, trend setting is the game. Opening in Colony Square this winter, this restaurant will make the traditional dining experience a thing of the past. “Saints + Council is a social environment that lends itself to friends starting in one of the living room pods with cocktails, then moving to a comfy booth for a chef-driven meal and retiring outside around the fire pit as they recall or create memories,” shares founder William Pitts, who was inspired by his past experiences to create this middle ground between relaxing and dining. “Throughout my career in restaurants, and as a restaurant guest, I have perceived a few challenges and problems. The first is the lack of a true ‘third place’ in our lives. We work and go home, then we go to restaurants and other places, but we are still lacking that ‘third place’ that brings needed balance into our lives.” And that’s where Saints + Council comes into play.

In addition to its unique restaurant model, Saints + Council’s food is made completely from scratch to wow its guests during breakfast, lunch and dinner. “One of my favorite dishes on the menu is our Dutch baby, a popover-style pancake that can be enjoyed savory or sweet. The classic Dutch baby is my favorite, with candied lemon rind, house-whipped butter, freshly squeezed lemon and a touch of sweet lemon icing,” says Pitts.
