The newest on the block comes from the team behind Decatur’s Brush Sushi Izakaya, James Beard Award-nominated chef Jason Liang, pastry masterchef Ching Yao Wang and business partner John Chen. Brush’s popularity made it the perfect addition to the booming Buckhead Village, enhancing the variety of global cuisines to set up shop at this hot spot. When they opened eight years ago in Decatur, this team was one of the first to introduce the Omakase sushi experience, and now, with a solid reputation under their belt, they intend to perfect what they are already known for, including but not limited to a reservation-only Omakase experience. However, this new concept hones Japanese culinary culture while setting itself apart. Chef Liang is delving into techniques such as Binchotan charcoal and traditional methods of curing their fish, ensuring every roll is supremely fresh. The cuisine is not the only thing to anticipate in this new haunt. Spanning 4,400 square feet, the interiors envelop you in a sleek ambiance with nods to Japanese elements such as carvings on kinoki panels, Japanese cypress wood and a plethora of traditional accents that enhance your experience. Tying Brush Sushi together, from the menu to the interiors, are memories of Japan, Taiwan and the U.S., making this a personal and elevated comingling of flavors and ideas.
